Located just across from the 72nd Street subway station, Simply Noodles might seem unassuming from the outside. But don't let appearances fool you! This tiny Chinese noodle shop has quietly built a reputation, with word-of-mouth recommendations buzzing through the community. The buzz is well-deserved, with readers raving about the noodles' simplicity and exceptional quality.
While the restaurant is known for its gluten-free 'Crossing-Bridge-Rice-Noodles' (CBRN), it was the scallion oil and mushroom noodles made with classic wheat dan dan noodles that truly captured my attention. This dish is a delightful variation, reminiscent of my previous culinary discovery, Nai Brother Sauerkraut Fish's version. I had given it an honorable mention in my piece, but the real star could be found at Simply Noodles.
But here's where it gets controversial... Scallion oil, a cornerstone of Jiangnan cuisine (greater Shanghai/Eastern China), uses fragrant oils as a primary seasoning. Unlike Sichuan's chili oils or Hunan's fermented peppers, these oils, often infused with shallots, ginger, or dried shrimp, date back to the Song Dynasty. They form the flavorful base of countless dishes and condiments in the region.
In Simply Noodles' version, the balance of fragrance and aroma is simply perfect. The dish is beautifully presented, with a visual elegance more akin to Japanese aesthetics. The thin noodles are delicately arranged on a pristine plate, topped with beautiful whole brown beech mushrooms.
At first bite, the flavor might seem understated. But trust me, the magic unfolds as you savor each mouthful. The noodles are thin, springy, and firm with a satisfying chew. As you eat, the sauce-to-noodle ratio increases, intensifying the earthy, fresh, and perfectly balanced sweet and salty flavors of the scallion oil, soy sauce, and sugar mixture. The dish evolves with each slurp, becoming increasingly punchy and pungent. It's almost like enjoying two meals in one – a truly unique experience!
And this is the part most people miss... The mushrooms provide a fantastic textural contrast, enhancing the dish's overall umami. The addition of fried garlic adds depth of flavor, perfectly complementing the sauce and mushrooms.
Simply Noodles also offers CBRN noodles in various preparations, including soups and, of course, with scallion oil, making it a haven for gluten-free diners. The scallion pancakes, which I haven't tried yet, were a hit with other customers, and I'm eager to try them. The interior is small but cozy, with a large cherry blossom painting and warm lighting creating a welcoming atmosphere.
